High-Protein breakfast: Why egg bites are winning foodservice menus

Operators who have observed morning traffic in the last two years know that breakfast menus are becoming more protein-heavy and less pastry-heavy.
The consumer doesn't only want "healthy." They want that fills. According to the 2025 Food & Health Survey by the International Food Information Council, "high-protein" is still one of the U.S.'s most popular eating patterns. FoodNavigator also reports that among European consumers aged under 35, now ranks protein as the single most important factor in healthy food , nearly twice the percentage of the general population.
It's changing the way breakfast is sold. CNBC, citing Circana reported that morning traffic at convenience stores with a food focus grew by 9% between mid-2025 and fast-food chains only grew 1%. Drive-thrus, bakeries and other fast food outlets no longer dominate breakfast. Breakfast is moving to cafes, convenience stores, hotel lobbys and grab-and go coolers.

Egg bites do not need to be "sold", as people already know exactly what they are. Most high-protein grab and go products aren't warm. The portions are clean. Because eggs are the basis, protein content is not dependent on other ingredients or isolates.
The operator's value is largely hidden behind the scenes. The frozen egg bite can be prepared in three minutes: defrost, heat up, and serve. No whisking or cracking required. This difference can be the whole business case for a convenience shop that sells 80 units by 10 am.
What We learned in Developing Ours
The texture of the egg bites after reheating was our biggest challenge in developing them. The majority of egg bites become rubbery when heated in the microwave or leak water if they are kept in a warmer. After months of experimenting with the slow-cook profile, we finally got a soft bite after a second heating cycle.
Our current egg bite for foodservice is a 65g piece that's made from >=46.8% of whole eggs, >=12% of cheddar and >=8% of pork bacon. It's finished with butter, cream cheese and mascarpone. It is designed to survive a microwave and commercial warmer without drying out.
It can be reheated in a microwave or an oven within three minutes. Once thawed it can be kept in the refrigerator for up to 10 days.

What Fits?
Format is suitable for most morning shows. Cafés serve it warm with coffee to replace pastries. Convenience shops can add it to existing grab-and go or hot-case sets. Hotels can use it to simplify their breakfast buffets, without losing the protein. Retailers use it to promote it as a post-workout or weekday snack.
