How is Sesame Marinated Egg different from regular soy-braised egg ?


Standard soy-braised eggs (lu dan) use a soy-sauce-and-five-spice brine, producing a dark brown, salt-forward, soy-dominant flavor. Sesame Marinated Egg uses a sesame-paste-based brine with a measured five-spice background, producing a lighter color, milder salt level, and a nutty, roasted-sesame aroma as the lead flavor note.
